150 gram Butter,1 cup caster sugar,3 eggs (large or 4 small),Vanilla Essence,2 cups self-raising flour,1/2 cup milk
Directions
Prepare a 23cm (9") round or square cake tin by lining base and sides with greaseproof paper. Preheat oven to 180C (350F).Beat butter and sugar in a small bowl until light and creamy.Gradually add eggs, beating thoroughly after each, add a teaspoon of vanilla essence and beat until combined.Fold in flour alternatively with milk, mix until combined and mixture is smooth, but do not overmix.Spoon into prepared tin, smooth surface, and bake for 35 to 40 minutes or until skewer comes out clean when inserted into center of cake.Leave in tin to cool for 5 minutes then turn onto rack to cool.(HINT: When cooking in a convection microwave or fan forced oven, make the mix slightly more moist)SEE Frosty Icing and Buttercream under "Icings and Creams" category for icing of this cake!
